Smashed cucumber salad with soy, sesame & chilli

Serves 4

Ingredients

  • 2 cucumbers
  • 1 clove of garlic
  • 1 tsp grated fresh ginger
  • 2 tbsp Nicolas Vahé Oil/Chili
  • 2 tbsp Nicolas Vahé Soya Sauce
  • 1 tbsp Nicolas Vahé Vinegar/Cucumber
  • 1 tbsp sesame seeds
  • Chilli flakes (optional)

Method

  1. Start by pressing down firmly on the cucumber with a large kitchen knife.
  2. Cut the cucumber into slanted, bite-sized pieces, and put them in a large bowl.
  3. Stir the grated garlic and ginger together with the chilli oil, soya sauce and vinegar.
  4. Pour the dressing over the cucumbers and leave to marinate for at least 30 min.
  5. Before serving, top the cucumbers with sesame seeds, preferably roasted and add a sprinkle of chilli flakes.

Fresh spring rolls with crispy veggies, tofu & goma dressing

Ingredients

  • 250 g tofu
  • Nicolas Vahé Rapeseed Oil
  • 1 ripe avocado
  • 1/2 cucumber
  • 2 carrots
  • 100 g cabbage
  • 1/2 bunch fresh coriander, chopped
  • 100 g peanuts, chopped
  • 12 pieces of rice paper
  • Lime wedges (optional)
  • Nicolas Vahé Soya Sauce
  • Nicolas Vahé Goma Dressing

Method

  1. Cut the tofu into long strips. Heat a little rapeseed oil in a deep pan and fry the tofu for a few minutes on each side until golden and crispy.
  2. Season with salt and pepper, e.g. chilli salt. Set them aside for later.
  3. Finely chop all the vegetables. When the filling is ready, start rolling.
  4. Take one piece of rice paper at a time and put it in a dish of cold water. Leave it in the water for 20-30 seconds. Take up the rice paper and place it where you want to roll, for example on a large, clean cutting board.
  5. Place the filling in a pile on the middle of the rice paper with cabbage as a base. This makes it easier to roll a uniform spring roll. Roll one end of the rice paper over the filling. Fold the rice paper inwards on both sides and then roll up into a roll.
  6. Slice the rolls into smaller lengths and arrange on a dish with optional lime wedges.
  7. Serve with soya sauce and goma dressing.

Iced tea with citrus

Serves 4

Cooks in 15 min

Ingredients

  • 8 tsp Nicolas Vahé Green Tea/
  • 1.5 l water
  • 4 tsp cane sugar or Nicolas Vahé Honey/Acacia
  • 1 blood orange, thinly sliced
  • 2 lemons, thinly sliced
  • Ice cubes

Method

  1. Use a heatproof jug or pitcher. Add the tea. Pour 80 degrees C hot water over the tea and leave it in the water for about 5-6 min.
  2. Remove the tea leaves. Add honey, stir, then add thinly sliced citrus fruit.
  3. Leave to steep and put the jug in the fridge to cool completely.
  4. When you’re ready to serve, fill glasses with ice cubes, pour over the iced tea and serve.

Serves 4

Ingredients

  • 8 tsp Nicolas Vahé White Tea/ Coconut & Passion
  • 1.5 l water
  • 4 tsp cane sugar or Nicolas Vahé Honey/Acacia
  • 2 lime, thinly sliced
  • 1 punnet of fresh raspberries
  • 1/2 bunch of fresh mint leaves
  • Ice cubes

Method

  1. Use a heatproof jug or pitcher. Add the tea. Pour 70 degrees C hot water over the tea and leave it in the water for about 5-6 min.
  2. Remove the tea leaves. Add honey, stir, then add thinly sliced lime, raspberries and fresh mint leaves.
  3. Leave to steep and put the jug in the fridge to cool completely.
  4. When you’re ready to serve, fill glasses with ice cubes, pour over the iced tea and serve.
